Jacob works closely with our onboard chefs to support, inspire and elevate their craft through masterclasses and ongoing collaboration.
Jacob Jan Boerma encourages chefs to create (simple yet) refined dishes at the highest level, focusing on quality, seasonality and innovative presentation. As Jacob says, “Great food is about respecting ingredients and creating honest, memorable experiences that connect people.” This philosophy guides our culinary concept onboard.
Together with Morii Yachting, Jacob helps craft a bespoke gastronomic experience that goes beyond traditional yacht catering - blending innovation, local flavours and refined artistry to delight even the most discerning palates.

Who is Jacob Jan Boerma? Jacob Jan Boerma is a renowned Dutch chef celebrated for his exceptional culinary expertise and innovative approach to haute cuisine. He gained international acclaim with his restaurant De Leest in Vaassen, which earned its first Michelin star just six months after opening in 2002, followed by a second in 2006 and a prestigious third star in 2013. 
Beyond his work at De Leest, Chef Boerma has expanded his influence in the culinary world through various ventures:
- The White Room in Amsterdam, where he serves as the signature chef, bringing his vision to the historic setting of the former ‘Witte Zaal’ at the Anantara Grand Hotel Krasnapolsky
- Fine Fleur in Antwerp, located within the most luxurious hotel in the Benelux, opened in 2021, focusing on perfection and the purest form of ingredients. 
- Restaurant Smaak in Yokohama, Japan, launched in 2022, where he integrates Japanese culinary traditions with his signature style.
Chef Boerma is also dedicated to mentoring and inspiring other chefs. He conducts masterclasses and provides consultancy services globally, emphasizing the importance of simplicity and high-level execution in cooking.
